Ingredients

  • 2 medium acorn squash
  • 1 lb Italian sausage
  • 1 cup breadcrumbs
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1 clove garlic, minced
  • 1 tsp dried sage
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Cut squash in half and remove seeds.
  3. Brush squash with olive oil and roast cut-side down for 30 minutes.
  4. Cook sausage in a skillet until browned.

  7. Flip squash and fill with sausage mixture.

  9. Bake for 15 minutes until golden.
