- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 1/2 cups chopped rhubarb
- 1 cup powdered sugar
- 2 tbsp orange juice
- 1 tsp orange zest
Instructions
- Preheat your oven to 350°F. Grease a loaf pan.
- Whisk together flour, almond flour, baking powder, baking soda, and salt.
- Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternately mix in dry ingredients and sour cream until just combined.
- Fold in rhubarb. Pour batter into the pan.
- Bake for 50-55 minutes. Cool in pan for 10 minutes, then transfer to a rack.
- Mix powdered sugar, orange juice, and zest. Drizzle over cooled loaf.
Notes
- Use fresh rhubarb for best texture.
- Store leftovers in an airtight container.
- Adjust icing thickness with more or less orange juice.
