Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 2 medium apples, peeled and diced
  • 1/4 cup brown sugar (for topping)
  • 1 tsp cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking powder, salt, and cinnamon.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs and vanilla, mixing well.
  4. Alternate adding flour mixture and milk to the butter mixture, stirring until combined.
  5. Fold in diced apples. Pour half the batter into the pan.
  6. Sprinkle half the brown sugar and cinnamon mix over the batter. Repeat with remaining batter and topping.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
