Description

A hearty and flavorful dish featuring acorn squash stuffed with a sweet and savory apple filling.


Ingredients

Scale
  • 2 medium acorn squash, halved and seeded
  • 1 tbsp olive oil
  • 1 apple, diced
  • 1/4 cup chopped onion
  • 1/4 cup dried cranberries
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/4 cup chopped pecans

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush squash halves with olive oil and place cut-side down on a baking sheet.
  3. Roast for 30 minutes until tender.
  4. While squash roasts, sauté apple and onion in a skillet over medium heat for 5 minutes.
  5. Add cranberries, maple syrup, cinnamon, nutmeg, and salt. Cook for 2 more minutes.
  6. Remove squash from oven and flip cut-side up.
  7. Fill each squash half with apple mixture and top with pecans.
  8. Return to oven for 10 minutes.
  9. Serve warm.

Notes

  • For a vegan version, ensure maple syrup is vegan-certified.
  • Walnuts can substitute pecans if preferred.
  • Squash is done when easily pierced with a fork.
