- 8 oz rice noodles
- 1/2 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1/2 cup shredded carrots
- 1/2 cup sliced cucumber
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1 tbsp sesame seeds
Instructions
- Cook rice noodles according to package instructions. Drain and rinse under cold water.
- In a bowl, whisk together peanut butter, soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger.
- Toss noodles with peanut sauce until evenly coated.
- Top with shredded carrots, sliced cucumber, green onions, and cilantro.
- Sprinkle sesame seeds before serving.

- Use crunchy peanut butter for extra texture.
- Add cooked chicken or tofu for more protein.
