Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1 ripe avocado, sliced
- 8 small corn tortillas
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, chili powder, cumin, and salt.
- Spread on a baking sheet and roast for 20-25 minutes until tender.
- Warm tortillas according to package instructions.
- Fill tortillas with roasted sweet potatoes and avocado slices.
- Top with cilantro and serve with lime wedges.
Notes
- For extra protein, add black beans.
- Adjust spices to your taste.
- Use flour tortillas if preferred.
