Description

A flavorful and colorful dish combining roasted vegetables with creamy goat’s cheese.


Ingredients

  • 1 large eggplant, diced
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 3 tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 100g goat’s cheese, crumbled

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss eggplant, zucchinis, bell peppers, onion, tomatoes, and garlic with olive oil, thyme, rosemary, salt, and pepper.
  3. Spread the vegetables on a baking tray in a single layer.
  4. Bake for 30-35 minutes, stirring halfway, until vegetables are tender.
  5. Sprinkle crumbled goat’s cheese over the top and bake for another 5 minutes.
  6. Serve warm.
