Ingredients

- 1 large eggplant, diced
- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 100g goat’s cheese, crumbled
Instructions
- Preheat oven to 375°F (190°C).
- Toss eggplant, zucchinis, bell peppers, onion, tomatoes, and garlic with olive oil, thyme, rosemary, salt, and pepper.
- Spread the vegetables on a baking tray in a single layer.
- Bake for 30-35 minutes, stirring halfway, until vegetables are tender.
- Sprinkle crumbled goat’s cheese over the top and bake for another 5 minutes.
- Serve warm.

- Use fresh herbs if available for better flavor.
- Adjust seasoning to your preference.
- Can be served with crusty bread or as a side dish.
