- 4 boneless, skinless chicken breasts
- 1/4 cup balsamic vinegar
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella, sliced
- 1/4 cup fresh basil leaves
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until browned.
- Transfer chicken to a baking dish. Top each breast with mozzarella slices.
- Bake for 10-12 minutes until cheese melts and chicken is fully cooked.
- While chicken bakes, reduce balsamic vinegar in a small saucepan over low heat until thickened.
- Top cooked chicken with tomatoes and basil. Drizzle with balsamic reduction.
- Serve immediately.

- Fresh mozzarella works better than shredded for melting.
