Description

These berry yogurt muffins are a perfect balance of sweetness and tang. They are moist, fluffy, and packed with fresh berries for a delicious treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup plain yogurt
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, or strawberries)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk flour, sugar, baking soda, baking powder, and salt.
  3. In another bowl, mix yogurt, milk, oil, egg, and vanilla.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in the berries.
  6. Divide batter evenly into the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for 5 minutes before removing from the tin.

Notes

  • Use fresh or frozen berries. If frozen, do not thaw.
