Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tbsp Cajun seasoning
- 1 tbsp olive oil
- 4 whole wheat tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup sliced red onions
- 1/4 cup Greek yogurt or vegan mayo
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add chickpeas and Cajun seasoning. Cook for 5 minutes, stirring occasionally.
- In a small bowl, mix Greek yogurt (or vegan mayo) with lemon juice, salt, and pepper.
- Warm tortillas in a dry pan or microwave for 20 seconds.
- Spread the yogurt sauce on each tortilla.
- Add shredded lettuce, tomatoes, red onions, and spiced chickpeas.
- Fold the sides of the tortilla and roll tightly.
- Cut in half and serve immediately.
Notes
- For extra spice, add hot sauce to the yogurt mix.
- Use gluten-free tortillas if needed.
- Store leftovers in an airtight container for up to 2 days.
