Description

A flavorful and healthy wrap filled with Cajun-spiced chickpeas, fresh vegetables, and a creamy sauce.


Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 4 whole wheat tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced red onions
  • 1/4 cup Greek yogurt or vegan mayo
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chickpeas and Cajun seasoning. Cook for 5 minutes, stirring occasionally.
  3. In a small bowl, mix Greek yogurt (or vegan mayo) with lemon juice, salt, and pepper.
  4. Warm tortillas in a dry pan or microwave for 20 seconds.
  5. Spread the yogurt sauce on each tortilla.
  6. Add shredded lettuce, tomatoes, red onions, and spiced chickpeas.
  7. Fold the sides of the tortilla and roll tightly.
  8. Cut in half and serve immediately.

Notes

  • For extra spice, add hot sauce to the yogurt mix.
  • Use gluten-free tortillas if needed.
  • Store leftovers in an airtight container for up to 2 days.
