Description

These California BLT Chopped Bagels are a bold, fresh twist on the classic BLT. Crispy bacon, creamy avocado, juicy tomatoes, and romaine lettuce are chopped and mixed with a tangy cream cheese dressing, then piled high onto toasted everything bagels. A quick and satisfying lunch or brunch that packs a ton of flavor in every bite.

  • 2 everything bagels (halved and lightly toasted)
  • 6 slices bacon (cooked until crispy and chopped)
  • 2 Roma tomatoes (diced)
  • 1 ripe avocado (diced)
  • 1 cup romaine lettuce (chopped)
  • ¼ red onion (finely diced (optional))
  • 4 tbsp cream cheese (softened)
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • Salt and black pepper (to taste)

Instructions

  1. Prepare the Filling:
  2. In a large mixing bowl, combine chopped bacon, diced tomatoes, avocado, chopped romaine lettuce, and red onion.
  3. Add Creamy Dressing:
  4. Add the softened cream cheese, mayonnaise, lemon juice, salt, and pepper to the mixture.
  5. Chop and Combine:
  6. Transfer everything to a cutting board and use a large chef’s knife to chop and fold the ingredients together until evenly coated and well-mixed.
  7. Assemble the Bagels:
  8. Spoon the chopped BLT mixture generously onto the bottom halves of each toasted everything bagel. Top with the other halves.

Notes

For extra flavor, try adding a pinch of crushed red pepper or chopped jalapeño.

You can substitute turkey bacon, grilled chicken, or plant-based alternatives if desired.

Store the chopped filling (without avocado and lettuce) in the fridge for up to 24 hours. Assemble just before serving.
