Ingredients

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cardamom
- 1/2 tsp salt
- 3 large eggs
- 1 cup vegetable oil
- 2 cups grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, whisk flour, sugar, baking powder, baking soda, cardamom, and salt.
- Add eggs and oil. Mix until well combined.
- Fold in grated carrots, pineapple, and walnuts.
- Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Let cool before frosting or serving.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add 1/2 tsp cinnamon.
- Replace walnuts with pecans if preferred.
