- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 1/2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, mix flour, baking soda, salt, and cinnamon.
- In another bowl, beat sugar, oil, and eggs until smooth. Stir in carrots.
- Gradually add the dry ingredients to the wet mixture. Fold in walnuts if using.
- Pour batter into the prepared pan. Bake for 35-40 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla. Spread over cooled cake.
Notes
- Store cake in the refrigerator.
- For a nut-free version, omit walnuts.
- Can be made in round pans for layered cake.
