Description

Cauliflower Tikka Masala is a flavorful vegetarian dish featuring roasted cauliflower in a creamy tomato-based sauce.


Ingredients

Scale
  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp garam masala
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F.
  2. Toss cauliflower florets with olive oil, turmeric, cumin, coriander, garam masala, paprika, and chili powder.
  3. Spread on a baking sheet and roast for 25 minutes.
  4. Heat oil in a pan over medium heat.
  5. Sauté onion until soft, then add garlic and ginger.
  6. Stir in diced tomatoes and simmer for 10 minutes.
  7. Blend sauce until smooth.
  8. Return sauce to pan, add coconut milk and roasted cauliflower.
  9. Simmer for 5 minutes.
  10. Garnish with cilantro and serve.

Notes

  • Adjust chili powder for desired spice level.
  • Serve with rice or naan.
  • Store leftovers in the fridge for up to 3 days.
