Description
Cauliflower Tikka Masala is a flavorful vegetarian dish featuring roasted cauliflower in a creamy tomato-based sauce.
Ingredients

- 1 medium cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- 1 tsp paprika
- 1/2 tsp chili powder
- 1 onion, diced
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 1 can (14 oz) diced tomatoes
- 1/2 cup coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F.
- Toss cauliflower florets with olive oil, turmeric, cumin, coriander, garam masala, paprika, and chili powder.
- Spread on a baking sheet and roast for 25 minutes.
- Heat oil in a pan over medium heat.
- Sauté onion until soft, then add garlic and ginger.
- Stir in diced tomatoes and simmer for 10 minutes.
- Blend sauce until smooth.
- Return sauce to pan, add coconut milk and roasted cauliflower.
- Simmer for 5 minutes.
- Garnish with cilantro and serve.
Notes
- Adjust chili powder for desired spice level.
- Serve with rice or naan.
- Store leftovers in the fridge for up to 3 days.
