Description

These Cherry Pie Bites are a charming, handheld twist on the classic cherry pie. With flaky pastry, sweet cherry filling, and just the right touch of golden crisp, they’re perfect for parties, picnics, or cozy nights in. Quick to make and easy to love!

Ingredients

Scale
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 cup cherry pie filling
  • 1 egg (beaten (for egg wash))
  • 1 tbsp coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Roll out pie crusts slightly to even out thickness.
  3. Cut out circles using a cookie cutter or glass.
  4. Gently press each dough circle into the mini muffin cups.
  5. Spoon 1 teaspoon of cherry pie filling into each crust.
  6. Brush edges of dough with beaten egg and sprinkle with coarse sugar, if using.
  7. Bake for 13–16 minutes, until crusts are golden and filling is bubbly.
  8. Allow to cool in tin for a few minutes before removing. Serve warm or at room temperature.

Notes

Try swapping cherry filling for blueberry, apple, or lemon for variety.

To prevent soggy bottoms, blind bake crusts for 5 minutes before filling.

Store in an airtight container for up to 2 days at room temp, or refrigerate up to 5 days.

These freeze well—thaw and warm in oven before serving.
