This Chicken Scampi is buttery, garlicky, and full of bright lemon flavor, served over creamy Parmesan rice. Itβs comfort food that feels fancy β ready in 40 minutes!

- 2 boneless (skinless chicken breasts, sliced into thin strips)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- 1/4 cup fresh parsley (chopped)
- 1 cup uncooked rice
- 2 cups chicken broth (for rice)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a medium saucepan, bring 2 cups of chicken broth to a boil. Add rice, cover, reduce heat, and simmer for 18β20 minutes until liquid is absorbed.
- Stir in Parmesan cheese, season with salt and pepper, and set aside.
- Meanwhile, season the chicken with salt and pepper.
- In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes and sautΓ© for 1 minute.
- Add chicken and cook for 5β7 minutes, until golden and cooked through.
- Pour in 1/2 cup broth and lemon juice. Simmer for 2β3 minutes.
- Stir in fresh parsley.
- Serve chicken and sauce over Parmesan rice. Enjoy!
Notes
Use chicken thighs instead of breasts if preferred.
