Ingredients

- 2 chicken breasts, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup water
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup chopped spinach
Instructions
- Heat a pot over medium heat. Add olive oil and sauté onions, carrots, and celery for 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and water. Add salt, pepper, thyme, and bay leaf.
- Simmer for 20 minutes until vegetables are tender.
- Stir in spinach and cook for 2 minutes.
- Remove bay leaf and serve hot.
Notes
- Use leftover rotisserie chicken for quicker prep.
- Adjust salt and pepper to taste.
- Store leftovers in an airtight container for up to 3 days.
