Ingredients

  • 2 chicken breasts, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 cup chopped spinach

Instructions

  1. Heat a pot over medium heat. Add olive oil and sauté onions, carrots, and celery for 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add diced chicken and cook until no longer pink.
  4. Pour in chicken broth and water. Add salt, pepper, thyme, and bay leaf.
  5. Simmer for 20 minutes until vegetables are tender.
  6. Stir in spinach and cook for 2 minutes.
  7. Remove bay leaf and serve hot.
