Ingredients

- 6 eggs
- 1 cup cooked chickpeas
- 1 cup chopped spinach
- 1/2 cup diced chorizo
- 1/4 cup grated cheese
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat.
- Add chorizo and cook for 2 minutes.
- Add chickpeas and spinach, cook for another 3 minutes.
- Whisk eggs with salt and pepper, then pour into the skillet.
- Sprinkle cheese on top.
- Transfer skillet to the oven and bake for 15 minutes.
- Let cool slightly before slicing.
Notes
- Use fresh spinach for best results.
- Substitute chorizo with turkey sausage if preferred.
- Store leftovers in the fridge for up to 3 days.
