Description

A hearty frittata packed with chickpeas, spinach, and chorizo for a protein-rich meal.


Ingredients

  • 6 eggs
  • 1 cup cooked chickpeas
  • 1 cup chopped spinach
  • 1/2 cup diced chorizo
  • 1/4 cup grated cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Add chorizo and cook for 2 minutes.
  4. Add chickpeas and spinach, cook for another 3 minutes.
  5. Whisk eggs with salt and pepper, then pour into the skillet.
  6. Sprinkle cheese on top.
  7. Transfer skillet to the oven and bake for 15 minutes.
  8. Let cool slightly before slicing.
