Chocolate Chip Cherry Bars

Chewy, buttery, and packed with juicy cherries and melty chocolate chips, these Chocolate Chip Cherry Bars are a quick and easy dessert you can make in one bowl. Perfect for potlucks, snacks, or a sweet afternoon treat!

Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1 cup light brown sugar packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
  • 1 cup pitted cherries halved (fresh or frozen)

Instructions
 

  • Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  • In a mixing bowl, whisk together melted butter and brown sugar until smooth.
  • Add the egg and vanilla extract. Stir to combine.
  • Add the flour and salt, and stir just until the flour is no longer visible. Do not overmix.
  • Gently fold in the chocolate chips and cherries.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25–30 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  • Allow to cool completely in the pan before slicing into bars.

Notes

Fresh or frozen cherries can be used, but if using frozen, pat them dry to prevent excess moisture.
For extra flavor, add 1/2 teaspoon almond extract or 1/2 cup chopped nuts.
Bars can be stored in an airtight container at room temperature for 3 days, in the fridge for 1 week, or frozen for up to 2 months.
To make gluten-free, substitute with a 1:1 gluten-free flour blend.
