Ingredients

  • 1 9-inch pie crust, baked and cooled
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 tsp salt
  • 3 cups whole milk
  • 4 oz semisweet chocolate, chopped
  • 2 oz unsweetened chocolate, chopped
  • 4 large egg yolks
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Whipped cream for topping

Instructions

  1. In a saucepan, whisk sugar, cornstarch, and salt.
  2. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly, until thick and bubbly.
  4. Remove from heat and add chocolates. Stir until melted.
  5. In a bowl, whisk egg yolks. Gradually add 1 cup of hot mixture to yolks, stirring constantly.
  6. Return yolk mixture to saucepan. Cook for 2 more minutes, stirring.
  7. Remove from heat. Stir in butter and vanilla.
  8. Pour filling into crust. Cover and chill for at least 4 hours.
  9. Top with whipped cream before serving.
