Ingredients

  • 1 (9-inch) unbaked pie crust
  • 1 (15-ounce) can pumpkin puree
  • 3/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 large eggs
  • 1 (12-ounce) can evaporated milk

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Roll out pie crust and fit into a 9-inch pie dish. Trim edges.
  3. In a large bowl, mix pumpkin puree, sugar, cinnamon, salt, ginger, and cloves.
  4. Beat in eggs, then stir in evaporated milk until smooth.
  5. Pour filling into the unbaked pie crust.
  6. Bake for 15 minutes, then reduce heat to 350°F (175°C) and bake for 40-45 minutes until set.
  7. Cool completely before serving.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
