Description

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 cup corn (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 2 Roma tomatoes, diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, bell peppers, red onion, tomatoes, jalapeño, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, red wine vinegar, cumin, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss gently to coat.
  4. Cover and refrigerate for at least 1 hour before serving to let flavors blend.
