- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 cup corn (fresh, canned, or frozen)
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, finely chopped
- 2 Roma tomatoes, diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1/3 cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon red wine vinegar
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, bell peppers, red onion, tomatoes, jalapeño, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, red wine vinegar, cumin, salt, and black pepper.
- Pour the dressing over the bean mixture and toss gently to coat.
- Cover and refrigerate for at least 1 hour before serving to let flavors blend.
- Serve with tortilla chips or as a side dish.
