Cowboy Caviar is a vibrant and flavorful dip or salad made with beans, corn, and fresh vegetables. It’s perfect for parties, potlucks, or as a side dish.

- 1 can black beans, rinsed and drained
- 1 can black-eyed peas, rinsed and drained
- 1 cup corn kernels (fresh or canned)
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 2 Roma tomatoes, diced
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, bell pepper, red onion, tomatoes, jalapeño, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
- Pour the dressing over the bean mixture and toss gently to coat.
- Cover and refrigerate for at least 30 minutes before serving.
- Serve chilled with tortilla chips or as a side salad.
Notes
- For a milder version, omit the jalapeño.
- This dish tastes even better the next day as flavors meld.
- You can substitute fresh corn with frozen or canned corn.
