Ingredients

  • 2 cups spelt flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 1/2 cup dried cranberries
  • 1/2 cup milk
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix flour, sugar, baking powder, and salt in a bowl.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Stir in cranberries.
  5. Whisk milk, egg, and vanilla in a separate bowl.
  6. Add wet ingredients to dry ingredients, stirring until just combined.
  7. Turn dough onto a floured surface and shape into a circle. Cut into wedges.
  8. Place on baking sheet and bake for 15-18 minutes until golden.
