- 2 pounds fresh spinach, washed and trimmed
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup grated Parmesan cheese
- 1/2 cup grated Gruyère cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, steam the spinach until wilted. Drain and squeeze out excess water.
- In a saucepan, melt the butter over medium heat. Stir in the flour to form a roux.
- Gradually whisk in the milk and cream until smooth. Cook until the sauce thickens.
- Add nutmeg, salt, and pepper to the sauce. Stir in the spinach.
- Transfer the mixture to a baking dish. Top with Parmesan and Gruyère cheeses.
- Bake for 20 minutes or until the top is golden and bubbly.
Notes
- You can substitute frozen spinach for fresh; just ensure it’s thoroughly drained.
- For a lighter version, use half-and-half instead of heavy cream.
- Let the gratin rest for 5 minutes before serving for easier slicing.
