Ingredients

- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 500g mushrooms, sliced
- 1 tsp paprika
- 1 tbsp flour
- 200ml vegetable broth
- 150ml sour cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, cook until soft.
- Stir in mushrooms and paprika, cook until mushrooms release moisture.
- Sprinkle flour and mix well.
- Pour in vegetable broth, simmer for 5 minutes.
- Reduce heat, stir in sour cream.
- Season with salt and pepper.
- Garnish with parsley and serve.

- Use any mushroom variety you prefer.
- Replace sour cream with coconut cream for a vegan option.
