Ingredients

- 2 cups pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup heavy cream
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and minced garlic. Cook until soft.
- Stir in pumpkin puree and spices.
- Pour in vegetable broth. Bring to a boil, then simmer for 15 minutes.
- Blend until smooth using an immersion blender.
- Stir in heavy cream and heat for 5 more minutes.
- Serve hot with a sprinkle of cinnamon on top.
Notes
- Use fresh pumpkin for better flavor.
- Adjust spices to taste.
- Store leftovers in the fridge for up to 3 days.
