- 2 lbs fresh tomatoes, chopped
- 1 cup fresh basil leaves, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic. Sauté until soft.
- Add chopped tomatoes and cook for 10 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in chopped basil, salt, and pepper.
- Blend the soup until smooth using an immersion blender.
- Add heavy cream and stir well.
- Simmer for another 5 minutes.
- Serve hot with a garnish of fresh basil.
Notes
- Use ripe tomatoes for the best flavor.
- Adjust seasoning to taste.
