Ingredients

  • 2 large eggplants
  • 2 cups breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 eggs
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried basil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants into 1/2-inch rounds.
  3. Sprinkle salt on both sides and let sit for 15 minutes to remove bitterness.
  4. Pat dry with paper towels.
  5. Beat eggs in a shallow bowl.
  6. Mix breadcrumbs, Parmesan, salt, pepper, and basil in another bowl.
  7. Dip eggplant slices in egg, then coat with breadcrumb mixture.
  8. Heat olive oil in a pan over medium heat.
