- 2 large eggplants
- 2 cups breadcrumbs
- 1 cup grated Parmesan cheese
- 2 eggs
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried basil
Instructions
- Preheat oven to 375°F (190°C).
- Slice eggplants into 1/2-inch rounds.
- Sprinkle salt on both sides and let sit for 15 minutes to remove bitterness.
- Pat dry with paper towels.
- Beat eggs in a shallow bowl.
- Mix breadcrumbs, Parmesan, salt, pepper, and basil in another bowl.
- Dip eggplant slices in egg, then coat with breadcrumb mixture.
- Heat olive oil in a pan over medium heat.
- Fry eggplant slices for 2-3 minutes per side until golden brown.
- Layer eggplant, marinara sauce, and mozzarella in a baking dish.
- Repeat layers, ending with cheese on top.
- Bake for 25 minutes until bubbly and golden.
