- 2 cups cherry tomatoes, halved
- 1 bell pepper, sliced
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 425°F (220°C).
- Toss gnocchi, tomatoes, bell pepper, onion, and garlic with olive oil, oregano, salt, and pepper on a sheet pan.
- Spread evenly in a single layer.
- Roast for 20-25 minutes, stirring halfway, until gnocchi is crispy and vegetables are tender.
- Sprinkle with Parmesan cheese if using.
- Garnish with fresh basil before serving.

- Use fresh or shelf-stable gnocchi.
- Add other vegetables like zucchini or mushrooms if desired.
- For extra crispiness, broil for 1-2 minutes at the end.
