Ingredients

- 3 ripe tomatoes, diced
- 1 large avocado, diced
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh cilantro, chopped
- 2 tbsp olive oil

Instructions
- Wash and dice cucumbers, tomatoes, and avocado.
- Thinly slice red onion and chop cilantro.
- Combine all ingredients in a large bowl.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss gently and serve immediately.

- Best served fresh to prevent avocado from browning.
