Description

A hearty and flavorful vegetarian soup made with pumpkin, red lentils, and aromatic spices.


Ingredients

  • 1 cup red lentils, rinsed
  • 2 cups pumpkin, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Stir in curry powder, cumin, and turmeric.
  4. Add pumpkin and lentils, mix well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 25 minutes.
