Description

Easy pumpkin muffins are a delicious and simple treat perfect for fall or any time you crave a spiced, moist muffin.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon ginger
  • 2 eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugars, baking soda, salt, and spices.
  3. In another bowl, beat eggs, pumpkin puree, oil, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients. Mix until just combined.
  5. Spoon batter into muffin cups, filling each 3/4 full.
  6. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  7. Cool in pan for 5 minutes, then transfer to a wire rack.

Notes

  • Do not overmix the batter to keep muffins tender.
  • For extra flavor, add 1/2 cup chopped walnuts or chocolate chips.
  • Store cooled muffins in an airtight container for up to 3 days.
