Description

Shakshuka is a flavorful North African dish of poached eggs in a spicy tomato and pepper sauce. It’s perfect for breakfast or brunch.


Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • 1 can (14 oz) crushed tomatoes
  • 4 eggs
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper. Cook until soft, about 5 minutes.
  3. Add garlic and spices. Cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes. Simmer for 10 minutes.
  5. Make small wells in the sauce and crack eggs into them.
  6. Cover and cook until egg whites are set, about 5-7 minutes.
  7. Season with salt and pepper. Garnish with fresh herbs.
