- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off peppers, remove seeds, and set aside.
- Heat olive oil in a pan over medium heat. Sauté onion and garlic until soft.
- Add ground meat, cooking until browned. Drain excess fat.
- Stir in rice, diced tomatoes, salt, pepper, and oregano.
- Stuff peppers with the meat mixture and place in a baking dish.
- Sprinkle cheese on top of each pepper.
- Bake for 25-30 minutes until peppers are tender and cheese is melted.
Notes
- For a vegetarian option, replace meat with cooked lentils or beans.
- Adjust seasonings to taste.
- Use any color bell pepper for variety.
