A quick and easy taco casserole bake packed with flavor. Perfect for busy weeknights and loved by kids.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 1 bag (10 oz) tortilla chips

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat. Drain excess fat.
  3. Add taco seasoning and water. Simmer for 5 minutes.
  4. Stir in black beans, corn, and salsa. Cook for 2 more minutes.
  5. Layer half the tortilla chips in a 9×13-inch baking dish.
  6. Spread the beef mixture evenly over the chips.
  7. Sprinkle with half the cheese.
  8. Repeat layers with remaining chips and cheese.
  9. Bake for 15-20 minutes until cheese is melted and bubbly.
  10. Let cool for 5 minutes before serving.

Notes

  • Use lean ground beef for less grease.
  • Swap black beans for pinto beans if preferred.
