Ingredients

- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup uncooked white rice
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, cook until soft.
- Pour in vegetable broth and diced tomatoes.
- Stir in rice, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until rice is tender.
- Garnish with fresh parsley before serving.

- Use fresh tomatoes if preferred.
- Adjust seasoning to taste.
