- 2 cups short-grain rice
- 4 cups vegetable broth
- 1 onion, diced
- 2 bell peppers, sliced
- 1 zucchini, diced
- 1 cup green beans, trimmed
- 3 cloves garlic, minced
- 1 tomato, chopped
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp saffron threads
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic, sauté until softened.
- Stir in bell peppers, zucchini, and green beans. Cook for 5 minutes.
- Add tomato, paprika, turmeric, and saffron. Mix well.
- Pour in the rice and stir to coat with the vegetables.
- Add vegetable broth, season with salt and pepper, and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Use a wide pan for even cooking.
- Do not stir the rice once it starts simmering to develop the crust.
- Adjust spices to your taste.
