Description

A simple and delicious recipe for veggie quesadillas, perfect for a quick meal or snack.


Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spinach
  • 1 tbsp olive oil
  • 1 tsp taco seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions, bell peppers, and mushrooms. Cook for 3-4 minutes.
  3. Add spinach, taco seasoning, salt, and pepper. Cook for another 2 minutes.
  4. Place one tortilla on a flat surface. Sprinkle half the cheese on it.
  5. Spread the cooked veggies evenly over the cheese.
  6. Sprinkle the remaining cheese on top and cover with the second tortilla.
  7. Heat a clean pan over medium heat. Carefully transfer the quesadilla to the pan.
  8. Cook for 2-3 minutes on each side until golden brown and cheese is melted.
  9. Remove from heat, let cool for a minute, then slice and serve.

Notes

  • Use any veggies you prefer—zucchini or corn work well.
  • For extra flavor, add a pinch of chili powder or hot sauce.
  • Serve with salsa, guacamole, or sour cream.
