Description

Elote, or Mexican street corn, is a popular grilled corn dish coated with creamy mayonnaise, tangy cotija cheese, chili powder, and lime juice. A flavorful and easy-to-make snack.


Ingredients

  • 4 ears of corn, husks removed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 tsp chili powder
  • 1 lime, juiced
  • 2 tbsp chopped cilantro
  • Salt to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill corn, turning occasionally, until lightly charred (8-10 minutes).
  3. In a bowl, mix mayonnaise and sour cream.
  4. Brush grilled corn with the mayo-sour cream mixture.
  5. Sprinkle with cotija cheese, chili powder, and lime juice.
  6. Garnish with cilantro and salt before serving.

Notes

  • Cotija cheese can be substituted with feta.
  • For extra heat, add cayenne pepper.
