Elote, or Mexican street corn, is a popular grilled corn dish coated with creamy mayonnaise, tangy cotija cheese, chili powder, and lime juice. A flavorful and easy-to-make snack.

- 4 ears of corn, husks removed
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1 lime, juiced
- 2 tbsp chopped cilantro
- Salt to taste
Instructions
- Preheat grill to medium-high heat.
- Grill corn, turning occasionally, until lightly charred (8-10 minutes).
- In a bowl, mix mayonnaise and sour cream.
- Brush grilled corn with the mayo-sour cream mixture.
- Sprinkle with cotija cheese, chili powder, and lime juice.
- Garnish with cilantro and salt before serving.
Notes
- Cotija cheese can be substituted with feta.
- For extra heat, add cayenne pepper.
