- 2 cups black beans, cooked
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup red onion, finely chopped
- 1 lime, juiced
- 1 tsp cumin
- 1 tsp chili powder
- 8 small tortillas
- 1/2 cup cilantro, chopped
- 1/2 cup shredded cheese (optional)
Instructions
- Heat a pan over medium heat.
- Add black beans, corn, and red bell pepper. Cook for 5 minutes.
- Stir in cumin and chili powder.
- Warm tortillas in a dry pan or microwave.
- Fill tortillas with the bean mixture.
- Top with avocado, red onion, cilantro, and cheese.
- Squeeze lime juice over the tacos.
- Serve immediately.
