Ingredients

- 2 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Heat oil in a large pan over medium heat.
- Add minced garlic and sauté for 30 seconds.
- Add mixed vegetables and stir-fry for 3-4 minutes.
- Push vegetables to one side, crack eggs into the pan, and scramble.
- Add cooked rice, soy sauce, and sesame oil. Mix well.
- Cook for 3-4 minutes, stirring occasionally. Season with salt and pepper.
- Serve hot.
