Description

Ingredients

  • 1 cup grated zucchini (packed)
  • 1/2 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a large bowl, mix zucchini, melted coconut oil, honey, eggs, and vanilla extract.
  3. In another bowl, whisk cocoa powder, flour, baking soda, and salt.
  4. Combine the wet and dry ingredients until just mixed. Fold in chocolate chips.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Let cool before cutting into squares.
