Description

Juicy, tender chunks of chicken marinated in garlic and olive oil, grilled or oven-baked, and finished with a buttery Parmesan coating. Perfect for an easy dinner or outdoor cookout—crowd-pleasing and bursting with flavor!


Ingredients

  • 1.5 lbs boneless (skinless chicken breasts or thighs, cut into chunks)
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika (optional)
  • ¾ cup freshly grated Parmesan cheese
  • 2 tbsp melted butter
  • 2 tbsp fresh parsley (chopped (for garnish))

Instructions

  1. In a mixing bowl, combine olive oil, garlic, salt, pepper, and paprika.
  2. Add chicken chunks and toss until evenly coated. Cover and marinate for at least 30 minutes (up to 4 hours).
  3. Preheat your grill to medium-high or oven to 400°F (200°C).
  4. If using wooden skewers, soak them in water for at least 30 minutes.
  5. Thread the marinated chicken onto skewers.
  6. Grill for 4–5 minutes per side, or bake for 20–25 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
  7. While hot, brush chicken with melted butter and sprinkle generously with Parmesan cheese.
  8. Garnish with chopped parsley and serve immediately.

Notes

To avoid burning, always soak wooden skewers before grilling.

Can be made ahead: marinate earlier in the day or even the night before.

For extra flavor, add a pinch of red pepper flakes to the marinade.

These skewers are great served with pasta, salad, or in pita wraps with tzatziki.

Store leftovers in the fridge for up to 3 days. Reheat in oven or microwave before serving.
