Description
Juicy, tender chunks of chicken marinated in garlic and olive oil, grilled or oven-baked, and finished with a buttery Parmesan coating. Perfect for an easy dinner or outdoor cookout—crowd-pleasing and bursting with flavor!
Ingredients
- 1.5 lbs boneless (skinless chicken breasts or thighs, cut into chunks)
- 3 tbsp olive oil
- 4 cloves garlic (minced)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika (optional)
- ¾ cup freshly grated Parmesan cheese
- 2 tbsp melted butter
- 2 tbsp fresh parsley (chopped (for garnish))
Instructions
- In a mixing bowl, combine olive oil, garlic, salt, pepper, and paprika.
- Add chicken chunks and toss until evenly coated. Cover and marinate for at least 30 minutes (up to 4 hours).
- Preheat your grill to medium-high or oven to 400°F (200°C).
- If using wooden skewers, soak them in water for at least 30 minutes.
- Thread the marinated chicken onto skewers.
- Grill for 4–5 minutes per side, or bake for 20–25 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
- While hot, brush chicken with melted butter and sprinkle generously with Parmesan cheese.
- Garnish with chopped parsley and serve immediately.
Notes
To avoid burning, always soak wooden skewers before grilling.
Can be made ahead: marinate earlier in the day or even the night before.
For extra flavor, add a pinch of red pepper flakes to the marinade.
These skewers are great served with pasta, salad, or in pita wraps with tzatziki.
Store leftovers in the fridge for up to 3 days. Reheat in oven or microwave before serving.
