Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 2 cups chicken broth
  • 1/2 cup raisins
  • 1/4 cup slivered almonds, toasted
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until softened.
  3. Stir in turmeric, cumin, coriander, cinnamon, and cayenne pepper. Cook for 1 minute.
  4. Add chicken thighs and brown on both sides.
  5. Pour in chicken broth and bring to a simmer. Cover and cook for 15 minutes.
  6. Stir in basmati rice and raisins. Cover and cook for 20 minutes.
  7. Fluff rice with a fork and garnish with toasted almonds.
  8. Serve warm.
