- 1 lb chicken thighs, boneless and skinless
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 2 cups chicken broth
- 1/2 cup raisins
- 1/4 cup slivered almonds, toasted
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until softened.
- Stir in turmeric, cumin, coriander, cinnamon, and cayenne pepper. Cook for 1 minute.
- Add chicken thighs and brown on both sides.
- Pour in chicken broth and bring to a simmer. Cover and cook for 15 minutes.
- Stir in basmati rice and raisins. Cover and cook for 20 minutes.
- Fluff rice with a fork and garnish with toasted almonds.
- Serve warm.
