Description

Delicious and tangy lemon bars with a gluten-free crust, perfect for a refreshing dessert.


Ingredients

  • 1 cup gluten-free flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix gluten-free flour, powdered sugar, and butter until crumbly.
  3. Press the mixture into the bottom of a greased 8×8 inch baking pan.
  4. Bake for 15 minutes or until lightly golden.
  5. In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for another 20 minutes or until set.
  8. Let cool completely before cutting into bars.
