- 1 cup gluten-free flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix gluten-free flour, powdered sugar, and butter until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking pan.
- Bake for 15 minutes or until lightly golden.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder.
- Pour the lemon mixture over the baked crust.
- Bake for another 20 minutes or until set.
- Let cool completely before cutting into bars.
Notes
- Store lemon bars in an airtight container in the refrigerator for up to 3 days.
- You can dust the bars with powdered sugar before serving for added sweetness.
