Ingredients

- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp butter
- 1/2 cup milk
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tsp dried thyme
- 1/2 tsp black pepper
Instructions
- In a large pot, sauté onion, carrots, and celery in butter until softened.
- Add chicken broth, thyme, and black pepper. Bring to a boil.
- Mix flour, baking powder, salt, milk to form dumpling dough.
- Drop spoonfuls of dough into boiling broth.
- Reduce heat, cover, and simmer for 15 minutes.
- Add shredded chicken and cook for 5 more minutes.
- Serve hot.

- Use leftover rotisserie chicken for faster prep.
- Dumplings will expand as they cook.
