Instructions

  1. Preheat your grill to medium-high. Halve the peaches and remove the pits. Brush them lightly with olive oil. Peel back the corn husks, remove the silk, and brush with oil.
  2. Place the peaches cut-side down on the grill for 3-4 minutes until grill marks appear. Rotate the corn occasionally for about 10 minutes until charred.
  3. Slice the grilled peaches into wedges and cut the corn kernels off the cob. In a large bowl, combine peaches, corn, red onion, arugula, and feta cheese.
