Instructions
- Preheat your grill to medium-high. Halve the peaches and remove the pits. Brush them lightly with olive oil. Peel back the corn husks, remove the silk, and brush with oil.
- Place the peaches cut-side down on the grill for 3-4 minutes until grill marks appear. Rotate the corn occasionally for about 10 minutes until charred.
- Slice the grilled peaches into wedges and cut the corn kernels off the cob. In a large bowl, combine peaches, corn, red onion, arugula, and feta cheese.
