- 4 ripe peaches, halved and pitted
- 1 tbsp olive oil
- 2 cups vanilla ice cream
- 1/4 cup caramel sauce
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your grill to medium heat.
- Brush the peach halves with olive oil.
- Grill the peaches cut-side down for 3-4 minutes until grill marks appear.
- Flip and grill for another 2-3 minutes until softened.
- Remove from the grill and let cool slightly.
- Place two peach halves in each serving bowl.
- Top with a scoop of vanilla ice cream.
- Drizzle with caramel sauce and garnish with mint if desired.
