Description

Ingredients

  • 1 ¾ cups whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • ¼ tsp cloves
  • 1 cup pumpkin puree
  • ½ cup maple syrup or honey
  • 2 eggs
  • ¼ cup melted coconut oil
  • ¼ cup almond milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Whisk flour, baking soda, salt, and spices in a bowl.
  3. In another bowl, mix pumpkin puree, maple syrup, eggs, coconut oil, almond milk, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the loaf pan. Bake for 45-50 minutes or until a toothpick comes out clean.
  6. Cool for 10 minutes before slicing.

Notes

  • Use fresh pumpkin puree for best results.
  • Can substitute honey with maple syrup.
