Ingredients

- 1 ¾ cups whole wheat flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ¼ tsp cloves
- 1 cup pumpkin puree
- ½ cup maple syrup or honey
- 2 eggs
- ¼ cup melted coconut oil
- ¼ cup almond milk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Whisk flour, baking soda, salt, and spices in a bowl.
- In another bowl, mix pumpkin puree, maple syrup, eggs, coconut oil, almond milk, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the loaf pan. Bake for 45-50 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before slicing.
Notes
- Use fresh pumpkin puree for best results.
- Can substitute honey with maple syrup.
- Store in an airtight container for up to 3 days.
